Sweet Healthy Treat Contest Winner & Recipe



We have a winner! Congratulations Ria Malloy.

It has been fun interacting with you all and trying out your recipes and ideas. Thank you for participating and for your patience with the final results! On December 31st I prepared three of the recipe submissions for breakfast for the kiddos.


The three I choose were...

1. Chocolate Peanut Butter Haystacks by Ria Malloy
2. Spinach Cake Muffins by Radha Roy 
3. Chocolate Mousse Frosting Shots by Kris Metzger

Handsdown all three of my kiddo's agreed that they liked the Chocolate Peanut Butter Haystacks the best and the Spinach Cake Muffins came in 2nd or also knows as "The Incredible Hulk" muffins.  They didn't care for the Chocolate Mousse, although I enjoyed it a little too much.

Today, I had time with just my 2yr old girl and we made the Spinach Cake Muffins together. 


I posted the picture above on facebook and got a ton of requests for the recipe.
Here it is... Enjoy!

Spinach Cake Muffins  (Makes 24 Mini Muffins)

 Prep Time:3 minutes,Cook Time: 12 minutes,Total Time: 15 minutes,

Ingredients
            1/2 cup unsweetened applesauce
            1 large egg
            2 teaspoons vanilla extract
            1 cup fresh spinach, packed
            1/3 cup sugar (I used pure cane sugar)
            2 tablespoons vegetable or canola oil
            1 1/2 cups all purpose flour (I used 3/4 cup whole wheat flour)
            1 teaspoon baking powder
            1/2 teaspoon baking soda
            1/2 teaspoon salt

Preparation
.                 1. Preheat oven to 350 F.
.                 2. Place the first 6 ingredients in a food processor and puree.
.                 3. Place the remaining ingredients in a separate bowl and combine.
.                 4. Pour the spinach puree in a large mixing bowl.
.                 5. Slowly mix the dry ingredients into the wet until combined.
.                 6. Scoop batter into a greased mini muffin tin, filling each cup 2/3 of the way.
.                 7. Bake for 12 minutes. (*add about 10mins for regular sized muffins)
.                 8. Serve.

    I love your blog, the recipes, your success with helping your clients..... and most of all YOU.

    After all, I am your mom and I am proud of you. Exercise has always been so important in my life in making me feel very good. I am pushing 60 now and have always used it to lose weight, but I have to say more than that I keep going to exercise because it make me feel good and optimistic and younger! It does something to your brain in putting me in a good place for the day. I am 59 and last Sunday, I tried Paddle boarding for the first time. Yes, I live in Hawaii, so I CAN. I had so much fun out in the water balancing my body on the board, looking up and out and using my core to move the board. The moral of the story is, you do not have to decline with age. It can get better with EXERCISE.
